Description
Tender, juicy steak bites seared in garlic butter and served atop a bed of rigatoni pasta coated in a rich, creamy Alfredo sauce. This indulgent dish is perfect for a hearty dinner that feels gourmet but comes together in under an hour.
Ingredients
- 1 lb sirloin steak, cut into 1-inch cubes
- Salt and black pepper, to taste
- 1 tbsp olive oil
- 4 tbsp unsalted butter, divided
- 4 cloves garlic, minced, divided
- 1 tsp fresh thyme leaves
- 12 oz rigatoni pasta
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/4 tsp nutmeg (optional)
- 2 tbsp chopped fresh parsley, for garnish
Instructions
- Bring a large pot of salted water to a boil. Cook rigatoni according to package instructions until al dente. Drain and set aside, reserving 1/2 cup pasta water.
- Season the steak cubes with salt and pepper. In a large skillet over high heat, heat olive oil and 1 tbsp butter. Add the steak in a single layer and sear for 2-3 minutes per side until browned and cooked to your liking. Remove steak from skillet and set aside.
- Reduce heat to medium. Add the remaining 3 tbsp butter and half of the minced garlic to the skillet. Cook for 1 minute until fragrant, scraping up any browned bits. Return the steak to the skillet and toss to coat in garlic butter. Add thyme leaves and cook for another 30 seconds. Transfer steak to a plate and cover loosely.
- In the same skillet, add the remaining minced garlic and cook over medium heat for 30 seconds. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese, garlic powder, and nutmeg (if using). Whisk until the sauce is smooth and thickened, about 3-4 minutes.
- Add the cooked rigatoni to the sauce, tossing to coat. If the sauce is too thick, add reserved pasta water a tablespoon at a time until desired consistency. Season with salt and pepper to taste.
- Serve the Alfredo rigatoni on plates or a large platter, top with the garlic butter steak bites, and garnish with fresh parsley. Serve immediately.
Notes
You can customize the seasonings to taste. For extra richness, substitute half-and-half for some of the heavy cream, but note that the sauce may not be as thick. Adjust the heat level by adding red pepper flakes with the garlic.
