Description
Tender cod strips pan-seared in garlic butter, served with a vibrant sweet chili lime sauce. A quick and flavorful seafood dish perfect for a weeknight dinner.
Ingredients
- 1 lb cod fillets, cut into strips
- Salt and black pepper, to taste
- 1/2 cup all-purpose flour
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- For the Sweet Chili Lime Sauce:
- 1/4 cup sweet chili sauce
- 2 tablespoons fresh lime juice
- 1 tablespoon soy sauce
- 1 teaspoon honey
- 1 teaspoon lime zest (optional)
Instructions
- Pat cod strips dry with paper towels and season both sides with salt and pepper.
- Place flour in a shallow dish and dredge each cod strip, shaking off excess.
- In a small bowl, whisk together sweet chili sauce, lime juice, soy sauce, honey, and lime zest (if using). Set aside.
- Heat a large skillet over medium-high heat. Add 2 tablespoons butter.
- Once butter is melted and foaming, add half the cod strips. Cook for 2-3 minutes per side until golden and cooked through. Remove to a plate.
- Add remaining 2 tablespoons butter and minced garlic to the skillet. Cook for 30 seconds until fragrant.
- Return all cod strips to the skillet and spoon garlic butter over them. Cook for another minute.
- Serve immediately with the sweet chili lime sauce drizzled over or on the side.
Notes
You can customize the seasonings to taste. For a gluten-free version, use gluten-free flour blend. Adjust the sweetness or tanginess of the sauce by adding more honey or lime juice.
