Description
Golden pan-seared cod strips coated in a rich garlic butter, served with a bright and sweet chili lime sauce. A quick and flavorful seafood dish perfect for a weeknight dinner.
Ingredients
- 1.5 lbs cod fillets, cut into 1-inch strips
- Salt and pepper to taste
- 1/2 cup all-purpose flour (for dredging)
- 4 tablespoons unsalted butter, divided
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- For the Sweet Chili Lime Sauce:
- 1/4 cup sweet chili sauce
- 2 tablespoons fresh lime juice
- 1 tablespoon honey
- 1 teaspoon soy sauce
- 1 teaspoon lime zest (optional)
Instructions
- Pat the cod strips dry with paper towels and season both sides with salt and pepper. Lightly dredge each strip in flour, shaking off excess.
- In a small bowl, whisk together sweet chili sauce, lime juice, honey, soy sauce, and lime zest if using. Set aside.
- Heat olive oil in a large skillet over medium-high heat. Add cod strips in a single layer (work in batches if needed) and cook for 3-4 minutes per side, until golden and cooked through. Transfer to a plate.
- Reduce heat to medium. In the same skillet, melt 2 tablespoons butter. Add minced garlic and sauté for 30 seconds until fragrant. Return cod to the skillet and spoon garlic butter over the strips. Cook for another minute, then transfer to a serving platter.
- Drizzle the sweet chili lime sauce over the cod strips or serve on the side. Garnish with additional lime zest if desired.
