Ingredients
- 1 1/2 lbs cod fillets, cut into 1-inch strips
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 4 tbsp unsalted butter
- 3 cloves garlic, minced
- 1/4 cup sweet chili sauce
- 2 tbsp fresh lime juice
- 1 tbsp soy sauce
- 1 tsp honey
- 1/4 cup chopped fresh cilantro (for garnish)
- Lime wedges (for serving)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Season cod strips with salt, pepper, and garlic powder. Dredge each strip in flour, dip in beaten eggs, then coat with panko breadcrumbs. Place on prepared baking sheet.
- Bake for 12-15 minutes, until golden and cooked through. Remove from oven.
- While cod bakes, make the garlic butter: In a small saucepan, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Remove from heat.
- In a small bowl, whisk together sweet chili sauce, lime juice, soy sauce, and honey. Set aside.
- Heat a large skillet over medium heat. Add garlic butter mixture. Add the baked cod strips and toss gently to coat each strip in the garlic butter. Cook for 1-2 minutes until caramelized.
- Serve cod strips immediately with sweet chili lime sauce on the side. Garnish with cilantro and lime wedges.
- Enjoy!
Notes
You can customize the seasonings to taste. For a spicier sauce, add a pinch of red pepper flakes. If you prefer, you can pan-fry the cod instead of baking for extra crispiness.
