Description

Crispy, golden cod strips coated in a savory garlic butter sauce, served with a tangy and slightly spicy sweet chili lime dipping sauce. Perfect for a quick weeknight dinner or an elegant appetizer.


Ingredients

  • 1 1/2 lbs cod fillets, cut into 1-inch strips
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 4 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1/4 cup sweet chili sauce
  • 2 tbsp fresh lime juice
  • 1 tbsp soy sauce
  • 1 tsp honey
  • 1/4 cup chopped fresh cilantro (for garnish)
  • Lime wedges (for serving)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Season cod strips with salt, pepper, and garlic powder. Dredge each strip in flour, dip in beaten eggs, then coat with panko breadcrumbs. Place on prepared baking sheet.
  3. Bake for 12-15 minutes, until golden and cooked through. Remove from oven.
  4. While cod bakes, make the garlic butter: In a small saucepan, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Remove from heat.
  5. In a small bowl, whisk together sweet chili sauce, lime juice, soy sauce, and honey. Set aside.
  6. Heat a large skillet over medium heat. Add garlic butter mixture. Add the baked cod strips and toss gently to coat each strip in the garlic butter. Cook for 1-2 minutes until caramelized.
  7. Serve cod strips immediately with sweet chili lime sauce on the side. Garnish with cilantro and lime wedges.

Notes

You can customize the seasonings to taste. For a spicier sauce, add a pinch of red pepper flakes. If you prefer, you can pan-fry the cod instead of baking for extra crispiness.
