Description
Crispy, golden cod strips coated in a rich garlic butter sauce, served with a tangy and slightly spicy sweet chili lime dipping sauce. A quick and elegant weeknight dinner that’s bursting with flavor.
Ingredients
- 1 lb cod fillets, cut into 1-inch strips
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika
- 3 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1/4 cup sweet chili sauce
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 1 tablespoon chopped fresh cilantro (for garnish)
- Lime wedges (for serving)
Instructions
- Pat the cod strips dry with paper towels. In a shallow dish, mix together flour, salt, pepper, and paprika. Dredge each cod strip in the flour mixture, shaking off excess.
- Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Place the cod strips in the skillet in a single layer (cook in batches if needed) and cook for 2-3 minutes per side, until golden and cooked through. Remove from skillet and set aside.
- In the same skillet, reduce heat to medium. Add the remaining 2 tablespoons of butter and the minced garlic. Sauté for 1 minute until fragrant, scraping up any browned bits.
- Return the cod strips to the skillet, tossing gently to coat them in the garlic butter. Cook for an additional minute.
- In a small bowl, stir together sweet chili sauce, lime juice, and lime zest. Serve the cod strips with the sauce drizzled over or on the side. Garnish with cilantro and lime wedges.
Notes
You can substitute tilapia or halibut for cod. For extra heat, add a pinch of red pepper flakes to the garlic butter. To keep the strips extra crispy, ensure they are dry before dredging.
