Ingredients
- 1 lb cod fillets, cut into strips
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 cup sweet chili sauce
- 2 tablespoons fresh lime juice
- 1 tablespoon soy sauce
- 1 teaspoon lime zest
- Fresh cilantro for garnish (optional)
Instructions
- Pat cod strips dry with paper towels. Season with salt and pepper, then lightly coat with flour, shaking off excess.
- In a large skillet, melt butter and olive oil over medium heat. Add minced garlic and cook for 30 seconds until fragrant.
- Place cod strips in the skillet in a single layer. Cook for 3-4 minutes per side, until golden and cooked through (internal temp 145°F).
- Meanwhile, in a small bowl, whisk together sweet chili sauce, lime juice, soy sauce, and lime zest.
- Remove cod strips from skillet and serve immediately with the sweet chili lime sauce. Garnish with cilantro if desired.
Notes
You can customize the seasonings to taste. For extra heat, add a pinch of red pepper flakes to the butter.
