Description

Crispy golden cod strips coated in a rich garlic butter sauce, served with a tangy sweet chili lime dipping sauce. Perfect for a quick and flavorful weeknight dinner.


Ingredients

  • 1 lb cod fillets, cut into strips
  • 1/2 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup sweet chili sauce
  • 2 tbsp fresh lime juice
  • 1 tsp lime zest
  • 2 tbsp chopped fresh cilantro (optional)


Instructions

  1. Pat the cod strips dry with paper towels. In a shallow dish, mix flour, salt, pepper, and paprika. Place beaten eggs in another dish and panko in a third dish.
  2. Dredge each cod strip in the flour mixture, then dip in egg, and coat with panko, pressing gently to adhere. Set aside.
  3. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the garlic and sauté for 1 minute until fragrant. Remove garlic butter to a small bowl and set aside.
  4. In the same skillet, melt the remaining 2 tablespoons of butter over medium-high heat. Add the cod strips in a single layer (cook in batches if needed) and cook for 2-3 minutes per side until golden brown and cooked through. Remove to a plate.
  5. In a small bowl, whisk together sweet chili sauce, lime juice, and lime zest.
  6. Brush the cooked cod strips with the garlic butter and serve with the sweet chili lime sauce on the side. Garnish with cilantro if desired.

Notes

You can customize the seasonings to taste. For extra heat, add a pinch of cayenne to the flour mixture or a few red pepper flakes to the sauce.
