Description
Crispy, golden cod strips are coated in a rich garlic butter sauce and served with a tangy, sweet chili lime dipping sauce. A perfect weeknight dinner that’s both elegant and easy.
Ingredients
- 1 lb cod fillets, cut into strips
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 3 tablespoons butter
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 cup sweet chili sauce
- 2 tablespoons lime juice
- 1 teaspoon lime zest
- 1 tablespoon chopped fresh cilantro
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Pat the cod strips dry with paper towels. In a shallow dish, mix together flour, salt, pepper, and paprika.
- Dredge each cod strip in the flour mixture, shaking off any excess.
- In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Add the cod strips in a single layer (work in batches if needed) and cook for 3-4 minutes per side, until golden and cooked through. Remove to a plate.
- Reduce heat to medium and add the remaining 2 tablespoons of butter to the skillet. Once melted, add the minced garlic and cook for 1 minute until fragrant.
- Return the cod strips to the skillet, tossing gently to coat with the garlic butter. Cook for an additional minute.
- In a small bowl, whisk together sweet chili sauce, lime juice, and lime zest.
- Serve the cod strips hot, drizzled with the sweet chili lime sauce and garnished with cilantro and red pepper flakes if desired.
- Alternatively, serve the sauce on the side for dipping.
Notes
You can customize the seasonings to taste. For extra crispiness, use panko breadcrumbs instead of flour, or double-coat the fish.
