Description

Crispy, golden cod strips are coated in a rich garlic butter sauce and served with a tangy, sweet chili lime dipping sauce. A perfect weeknight dinner that’s both elegant and easy.


Ingredients

  • 1 lb cod fillets, cut into strips
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/4 cup sweet chili sauce
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 1 tablespoon chopped fresh cilantro
  • 1/2 teaspoon red pepper flakes (optional)


Instructions

  1. Pat the cod strips dry with paper towels. In a shallow dish, mix together flour, salt, pepper, and paprika.
  2. Dredge each cod strip in the flour mixture, shaking off any excess.
  3. In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Add the cod strips in a single layer (work in batches if needed) and cook for 3-4 minutes per side, until golden and cooked through. Remove to a plate.
  4. Reduce heat to medium and add the remaining 2 tablespoons of butter to the skillet. Once melted, add the minced garlic and cook for 1 minute until fragrant.
  5. Return the cod strips to the skillet, tossing gently to coat with the garlic butter. Cook for an additional minute.
  6. In a small bowl, whisk together sweet chili sauce, lime juice, and lime zest.
  7. Serve the cod strips hot, drizzled with the sweet chili lime sauce and garnished with cilantro and red pepper flakes if desired.
  8. Alternatively, serve the sauce on the side for dipping.

Notes

You can customize the seasonings to taste. For extra crispiness, use panko breadcrumbs instead of flour, or double-coat the fish.
