Description
Sweet, golden-fried pineapple rings served with a rich and creamy coconut dipping sauce. A tropical treat that’s perfect as a dessert or a unique appetizer.
Ingredients
- 1 fresh pineapple, peeled, cored, and cut into 1/2-inch rings
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- 1/2 cup shredded coconut (sweetened or unsweetened)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 cup granulated sugar
- Vegetable oil, for frying
- 1 can (13.5 oz) full-fat coconut milk
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a shallow bowl, mix the breadcrumbs, shredded coconut, cinnamon, nutmeg, and sugar. Set aside.
- Dredge each pineapple ring in the flour, then dip into the beaten eggs, and coat thoroughly with the breadcrumb mixture. Press gently to adhere.
- Heat about 1 inch of vegetable oil in a large skillet over medium-high heat. Carefully place the coated pineapple rings in the hot oil, working in batches to avoid crowding. Fry for 2-3 minutes per side, until golden brown and crispy.
- Remove the fried pineapple rings with a slotted spoon and drain on paper towels to remove excess oil.
- In a small saucepan, combine the coconut milk, heavy cream, powdered sugar, vanilla extract, and salt. Heat over medium-low heat, whisking frequently, until the sauce thickens slightly, about 5-7 minutes. Do not boil.
- Serve the warm coconut dipping sauce alongside the crispy fried pineapple rings. Enjoy!
Notes
You can customize the seasonings to taste. For a spicier kick, add a pinch of cayenne pepper to the breadcrumb mixture. The sauce can be made ahead and refrigerated; reheat gently before serving.
