Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 2 limes, juiced and zested
- 2 tbsp olive oil
- 1 tsp chili powder
- Salt and pepper to taste
- 2 cups cooked quinoa or rice
Instructions
- In a bowl, toss shrimp with olive oil, lime zest, chili powder, salt, and pepper.
- Heat a skillet over medium-high heat and cook shrimp for 2-3 minutes per side until pink and opaque.
- In a large bowl, combine cooked quinoa, avocado, cherry tomatoes, red onion, and cilantro.
- Add the cooked shrimp to the bowl and drizzle with fresh lime juice, gently tossing to combine.
- Serve immediately, garnished with extra cilantro if desired.
