A vibrant and healthy bowl featuring succulent shrimp marinated in fresh lime, creamy avocado, and a medley of colorful vegetables over cilantro-lime rice.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 3 tablespoons fresh lime juice
- 2 tablespoons olive oil, divided
- 1 teaspoon honey
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup long-grain white rice
- 2 cups water
- 1/4 cup chopped fresh cilantro
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels (fresh or frozen, thawed)
- 1 can black beans (15 oz), drained and rinsed
- 2 avocados, sliced
- 1 cup shredded red cabbage
- Lime wedges for serving
Instructions
- Combine lime juice, 1 tablespoon olive oil, honey, chili powder, garlic powder, salt, and pepper in a bowl. Add shrimp and marinate for 15 minutes.
- Meanwhile, cook rice in water according to package instructions. Once cooked, fluff with a fork and stir in chopped cilantro and remaining 1 tablespoon olive oil.
- Heat a large skillet over medium-high heat. Add marinated shrimp and cook for 2-3 minutes per side until pink and opaque. Remove from heat.
- To assemble bowls, divide rice among 4 bowls. Top each with shrimp, cherry tomatoes, corn, black beans, avocado slices, and shredded red cabbage.
- Serve immediately with extra lime wedges on the side.
Notes
You can customize the seasonings to taste. For extra heat, add a pinch of cayenne pepper to the marinade or top with jalapeño slices.
