Description

A vibrant and healthy bowl featuring succulent shrimp marinated in fresh lime, creamy avocado, and a medley of colorful vegetables over cilantro-lime rice.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3 tablespoons fresh lime juice
  • 2 tablespoons olive oil, divided
  • 1 teaspoon honey
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup long-grain white rice
  • 2 cups water
  • 1/4 cup chopped fresh cilantro
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh or frozen, thawed)
  • 1 can black beans (15 oz), drained and rinsed
  • 2 avocados, sliced
  • 1 cup shredded red cabbage
  • Lime wedges for serving


Instructions

  1. Combine lime juice, 1 tablespoon olive oil, honey, chili powder, garlic powder, salt, and pepper in a bowl. Add shrimp and marinate for 15 minutes.
  2. Meanwhile, cook rice in water according to package instructions. Once cooked, fluff with a fork and stir in chopped cilantro and remaining 1 tablespoon olive oil.
  3. Heat a large skillet over medium-high heat. Add marinated shrimp and cook for 2-3 minutes per side until pink and opaque. Remove from heat.
  4. To assemble bowls, divide rice among 4 bowls. Top each with shrimp, cherry tomatoes, corn, black beans, avocado slices, and shredded red cabbage.
  5. Serve immediately with extra lime wedges on the side.

Notes

You can customize the seasonings to taste. For extra heat, add a pinch of cayenne pepper to the marinade or top with jalapeño slices.
