Description

A vibrant and refreshing bowl featuring succulent shrimp, creamy avocado, and a zesty lime dressing, perfect for a light and healthy meal.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • For the Lime Dressing: 1/4 cup fresh lime juice, 2 tablespoons olive oil, 1 teaspoon honey, 1 clove garlic minced, salt and pepper


Instructions

  1. In a bowl, toss shrimp with olive oil, garlic, chili powder, cumin, salt, and pepper. Let marinate for 10 minutes.
  2. Heat a skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and cooked through. Set aside.
  3. In a small bowl, whisk together all dressing ingredients.
  4. In a large bowl, combine diced avocado, cherry tomatoes, red onion, and cilantro. Gently fold in cooked shrimp.
  5. Drizzle lime dressing over the bowl and toss gently to combine. Serve immediately.

Notes

You can customize the seasonings to taste. For extra heat, add a pinch of cayenne pepper.
