Description

A moist and flavorful flourless cake made with whole oranges, ground pistachios, and a hint of cardamom. Perfect for gluten-free diets.


Ingredients

  • 2 large oranges (about 1 lb total)
  • 1 cup granulated sugar
  • 6 large eggs
  • 2 cups raw pistachios, finely ground
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • Powdered sugar for dusting (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. Wash oranges thoroughly. Place whole oranges in a saucepan, cover with water, bring to a boil, then reduce heat and simmer for 1 hour until very soft. Drain and let cool.
  3. Cut cooled oranges in half, remove any seeds, and puree in a food processor until smooth.
  4. In a large bowl, beat eggs and sugar until pale and fluffy, about 5 minutes.
  5. Fold in the orange puree, ground pistachios, baking powder, cardamom, and salt until well combined.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for 45-50 minutes, until a toothpick inserted into the center comes out clean.
  8. Let cool in pan for 10 minutes, then remove sides and transfer to a wire rack to cool completely.
  9. Dust with powdered sugar before serving, if desired.

Notes

You can customize the seasonings to taste. For a different flavor, try adding a teaspoon of vanilla extract or a pinch of cinnamon. Ensure pistachios are finely ground for best texture.
