Description

A refreshing and hearty salad combining creamy feta, sweet dried cranberries, and protein-rich chickpeas, all tossed in a bright lemon vinaigrette.


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup crumbled feta cheese
  • 1/2 cup dried cranberries
  • 1/4 cup chopped fresh parsley
  • 1/4 cup thinly sliced red onion
  • 2 cups mixed salad greens
  • For the vinaigrette: 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey
  • Salt and black pepper to taste


Instructions

  1. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper to make the vinaigrette.
  2. In a large bowl, combine chickpeas, feta cheese, dried cranberries, parsley, red onion, and mixed greens.
  3. Pour the vinaigrette over the salad and toss gently until everything is evenly coated.
  4. Serve immediately, or refrigerate for 30 minutes to allow flavors to meld.

Notes

You can customize the seasonings to taste. For added crunch, toss in some toasted almonds or walnuts.
