Description
A refreshing and hearty salad combining creamy feta, sweet dried cranberries, and protein-rich chickpeas, all tossed in a bright lemon vinaigrette.
Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 cup crumbled feta cheese
- 1/2 cup dried cranberries
- 1/4 cup chopped fresh parsley
- 1/4 cup thinly sliced red onion
- 2 cups mixed salad greens
- For the vinaigrette: 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon honey
- Salt and black pepper to taste
Instructions
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper to make the vinaigrette.
- In a large bowl, combine chickpeas, feta cheese, dried cranberries, parsley, red onion, and mixed greens.
- Pour the vinaigrette over the salad and toss gently until everything is evenly coated.
- Serve immediately, or refrigerate for 30 minutes to allow flavors to meld.
Notes
You can customize the seasonings to taste. For added crunch, toss in some toasted almonds or walnuts.
