Description
All the gooey, caramelized pecan pie goodness—made the easy way with pie crust pressed into a pan and a glossy brown sugar filling.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1 large egg yolk
- 1-2 tablespoons ice water
- 1 cup light corn syrup
- 1 cup packed brown sugar
- 3 large eggs
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups pecan halves
Instructions
- Preheat oven to 350°F (175°C). In a food processor, combine flour, cold butter, and granulated sugar; pulse until mixture resembles coarse crumbs.
- Add egg yolk and 1 tablespoon ice water; pulse until dough comes together. If needed, add more water. Press dough evenly into a 9-inch pie dish.
- In a large bowl, whisk corn syrup, brown sugar, eggs, melted butter, vanilla, and salt until smooth. Stir in pecans.
- Pour filling into the prepared crust. Bake for 45-50 minutes, until filling is set and crust is golden. Cool completely before slicing.
