Description

All the gooey, caramelized pecan pie goodness—made the easy way with pie crust pressed into a pan and a glossy brown sugar filling.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1-2 tablespoons ice water
  • 1 cup light corn syrup
  • 1 cup packed brown sugar
  • 3 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups pecan halves


Instructions

  1. Preheat oven to 350°F (175°C). In a food processor, combine flour, cold butter, and granulated sugar; pulse until mixture resembles coarse crumbs.
  2. Add egg yolk and 1 tablespoon ice water; pulse until dough comes together. If needed, add more water. Press dough evenly into a 9-inch pie dish.
  3. In a large bowl, whisk corn syrup, brown sugar, eggs, melted butter, vanilla, and salt until smooth. Stir in pecans.
  4. Pour filling into the prepared crust. Bake for 45-50 minutes, until filling is set and crust is golden. Cool completely before slicing.
