Description
A refreshing and simple pasta salad loaded with classic Greek flavors like feta, olives, and tomatoes, tossed in a tangy vinaigrette.
Ingredients
- 8 oz rotini or penne pasta
- 1 cup cherry tomatoes (halved)
- 1 cup cucumber (diced)
- 1/2 cup red onion (thinly sliced)
- 1/2 cup Kalamata olives (halved)
- 1/2 cup crumbled feta cheese
- 1/3 cup extra-virgin olive oil
- 3 tbsp red wine vinegar
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt and black pepper to taste
Instructions
- Cook pasta according to package directions; drain and rinse under cold water to cool.
- In a large bowl, combine cooled pasta, tomatoes, cucumber, red onion, olives, and feta cheese.
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper.
- Pour dressing over salad and toss gently to combine.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
Notes
You can customize the seasonings to taste. Add chopped bell peppers or artichoke hearts for extra crunch.
