Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, cold and cut into small cubes
- 1 large egg yolk
- 2 cups fresh peaches, peeled and diced (about 3 medium peaches)
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1/2 teaspoon vanilla extract
- 1/2 cup rolled oats
- 1/3 cup brown sugar, packed
- 1/4 cup all-purpose flour
- 1/4 teaspoon ground cinnamon
- 4 tablespoons unsalted butter, cold and cut into small cubes
Instructions
- Preheat oven to 375°F (190°C). Grease an 8×8-inch baking dish or line with parchment paper.
- In a medium bowl, combine 1 1/2 cups flour, 1/2 cup granulated sugar, and salt. Cut in 3/4 cup cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Add egg yolk and mix until dough comes together.
- Press the dough evenly into the bottom of the prepared baking dish. Bake for 15 minutes, or until lightly golden. Set aside to cool slightly.
- In a separate bowl, mix diced peaches, 1/4 cup granulated sugar, lemon juice, cornstarch, and vanilla extract. Set aside.
- For the crumble topping, in a small bowl, combine oats, brown sugar, 1/4 cup flour, and cinnamon. Cut in 4 tablespoons cold butter until the mixture is crumbly.
- Spread the peach filling over the baked crust. Sprinkle the crumble topping evenly over the peaches.
- Bake for 25-30 minutes, or until the topping is golden brown and the peach filling is bubbly.
- Allow to cool completely in the pan before cutting into bars. Serve and enjoy!
Notes
You can customize the seasonings to taste. Add a pinch of nutmeg or ginger to the peach filling for extra warmth. For a softer crumble, reduce baking time by 5 minutes.
