Description

These Peach Crumble Bars are the perfect summer dessert, featuring a buttery shortbread crust, a sweet and tangy peach filling, and a crunchy oat crumble topping. They are easy to make and great for sharing.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, cold and cut into small cubes
  • 1 large egg yolk
  • 2 cups fresh peaches, peeled and diced (about 3 medium peaches)
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract
  • 1/2 cup rolled oats
  • 1/3 cup brown sugar, packed
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon ground cinnamon
  • 4 tablespoons unsalted butter, cold and cut into small cubes


Instructions

  1. Preheat oven to 375°F (190°C). Grease an 8×8-inch baking dish or line with parchment paper.
  2. In a medium bowl, combine 1 1/2 cups flour, 1/2 cup granulated sugar, and salt. Cut in 3/4 cup cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Add egg yolk and mix until dough comes together.
  3. Press the dough evenly into the bottom of the prepared baking dish. Bake for 15 minutes, or until lightly golden. Set aside to cool slightly.
  4. In a separate bowl, mix diced peaches, 1/4 cup granulated sugar, lemon juice, cornstarch, and vanilla extract. Set aside.
  5. For the crumble topping, in a small bowl, combine oats, brown sugar, 1/4 cup flour, and cinnamon. Cut in 4 tablespoons cold butter until the mixture is crumbly.
  6. Spread the peach filling over the baked crust. Sprinkle the crumble topping evenly over the peaches.
  7. Bake for 25-30 minutes, or until the topping is golden brown and the peach filling is bubbly.
  8. Allow to cool completely in the pan before cutting into bars. Serve and enjoy!

Notes

You can customize the seasonings to taste. Add a pinch of nutmeg or ginger to the peach filling for extra warmth. For a softer crumble, reduce baking time by 5 minutes.
