Description
A rich chocolate cake layered with caramel, pecans, and chocolate ganache, inspired by classic turtle candies.
Ingredients
- 1 box devil's food cake mix
- 3 large eggs
- 1/2 cup vegetable oil
- 1 cup water
- 1 cup caramel sauce
- 1 cup chopped pecans
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1/4 cup unsalted butter
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, mix cake mix, eggs, oil, and water until smooth. Divide batter evenly between pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean. Let cool completely.
- Place one cake layer on a plate. Spread 1/2 cup caramel sauce over the top and sprinkle with 1/2 cup pecans. Top with second cake layer.
- In a saucepan, heat heavy cream and butter until simmering. Pour over chocolate chips in a bowl, let sit for 2 minutes, then whisk until smooth. Stir in vanilla.
- Pour ganache over the top of the cake, allowing it to drip down the sides. Drizzle with remaining caramel and sprinkle with remaining pecans. Chill for 30 minutes before serving.
