Description

Chewy, rich cookies loaded with caramel bits, shredded coconut, and dark chocolate chips for an indulgent treat.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup shredded coconut
  • 1/2 cup dark chocolate chips
  • 1/2 cup caramel bits


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together butter, brown sugar, and granulated sugar until fluffy. Beat in egg and vanilla extract.
  3. In another bowl, whisk flour, baking soda, and salt. Gradually mix into wet ingredients until combined.
  4. Fold in shredded coconut, dark chocolate chips, and caramel bits until evenly distributed.
  5. Drop tablespoon-sized dough balls onto baking sheet, spacing 2 inches apart. Bake for 10-12 minutes until edges are golden.
  6. Let cookies cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
