Description

A moist and tender coffee cake loaded with spiced apples and a buttery crumb topping, perfect for breakfast or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup sour cream
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled and diced
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup brown sugar
  • 1/4 cup chopped pecans


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch square baking pan.
  2. In a large bowl, cream together butter and granulated sugar until fluffy. Beat in eggs one at a time, then stir in sour cream and vanilla.
  3. In another bowl, whisk flour, baking powder, and baking soda. Gradually mix into the wet ingredients until just combined.
  4. Fold in diced apples, cinnamon, and nutmeg. Spread batter evenly into the prepared pan.
  5. In a small bowl, combine brown sugar and pecans. Sprinkle evenly over the batter.
  6. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Cool before serving.
