Description

These roasted sweet potato wedges are perfectly crispy on the outside and tender on the inside, topped with tangy feta and a spicy-sweet hot honey drizzle.


Ingredients

  • 2 large sweet potatoes, cut into wedges
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons honey
  • 1 teaspoon red pepper flakes (or to taste)
  • 1 tablespoon fresh parsley, chopped (optional)


Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss sweet potato wedges with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  3. Arrange wedges in a single layer on the baking sheet, ensuring they are not touching. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
  4. While wedges bake, prepare hot honey: in a small bowl, mix honey with red pepper flakes.
  5. Remove wedges from oven and let cool slightly. Transfer to a serving platter, sprinkle with crumbled feta, and drizzle with hot honey. Garnish with parsley if desired.
