Description

Perfectly crispy sweet potato wedges roasted with savory spices, topped with creamy feta cheese and a spicy-sweet hot honey drizzle. An irresistible side dish or appetizer.


Ingredients

  • 2 large sweet potatoes, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled feta cheese
  • 3 tablespoons honey
  • 1 teaspoon red pepper flakes (or to taste)
  • 1 tablespoon apple cider vinegar
  • Fresh parsley or cilantro for garnish (optional)


Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss sweet potato wedges with olive oil, smoked paprika, garlic powder, salt, and black pepper until evenly coated.
  3. Arrange wedges in a single layer on the prepared baking sheet, leaving space between each piece for best crispiness.
  4. Roast for 25-30 minutes, flipping halfway through, until golden brown and crispy on the edges.
  5. While the wedges roast, prepare the hot honey drizzle: in a small saucepan, combine honey, red pepper flakes, and apple cider vinegar. Warm over low heat for 2-3 minutes, stirring gently. Remove from heat and set aside.
  6. Transfer roasted sweet potato wedges to a serving platter. Sprinkle crumbled feta cheese over the top.
  7. Drizzle the hot honey mixture generously over the wedges and feta. Garnish with fresh parsley or cilantro if desired. Serve immediately.

Notes

You can customize the seasonings to taste. For a milder heat, reduce or omit the red pepper flakes in the honey drizzle. The wedges are best enjoyed fresh from the oven but can be reheated in a 400°F oven for 5-7 minutes.
