Description
These crispy sweet potato stacks are layered with creamy brie, sweet caramelized apples, crunchy pecans, and finished with a tangy cranberry honey glaze. A perfect appetizer or side dish for any occasion.
Ingredients
- 2 large sweet potatoes, thinly sliced (1/8-inch thick)
- 8 oz brie cheese, sliced
- 2 apples (such as Honeycrisp or Fuji), peeled, cored, and thinly sliced
- 1/2 cup chopped pecans
- 1/4 cup dried cranberries
- 1/4 cup honey
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon fresh thyme leaves
- Salt and freshly ground black pepper, to taste
- Cooking spray or melted butter for greasing
Instructions
- Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin with cooking spray or melted butter.
- In a small saucepan, combine honey and dried cranberries. Warm over low heat until honey is thin and cranberries are plump, about 5 minutes. Set aside.
- In a large skillet, melt butter with olive oil over medium heat. Add apple slices and cook, stirring occasionally, until caramelized and golden, about 10-12 minutes. Season with a pinch of salt and set aside.
- To assemble stacks: Place a slice of sweet potato in the bottom of each muffin cup. Top with a small piece of brie, a few apple slices, a sprinkle of pecans, and a drizzle of the cranberry honey glaze. Repeat layers (sweet potato, brie, apple, pecans, glaze) until the cup is filled, finishing with a sweet potato slice on top. Press down gently.
- Brush the top of each stack with a little olive oil and season with salt, pepper, and thyme leaves.
- Bake for 25-30 minutes, until sweet potatoes are tender and edges are crispy. If desired, broil for 1-2 minutes for extra crispness.
- Let cool in the pan for 5 minutes, then carefully remove stacks using a spoon or fork. Serve warm, drizzled with additional cranberry honey glaze.
Notes
You can customize the seasonings to taste. For a variation, try adding a pinch of cinnamon or nutmeg to the apples. These stacks can be assembled ahead and refrigerated before baking.
