Description

These crispy smashed sweet potatoes are the perfect balance of sweet and savory. Roasted until golden and crispy on the outside, then topped with a tangy feta cream and a drizzle of honey. A stunning side dish or appetizer that’s sure to impress.


Ingredients

  • 2 lbs small sweet potatoes, scrubbed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • For the Feta Cream:
  • 4 oz feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • For the Honey Drizzle:
  • 2 tablespoons honey
  • 1 teaspoon fresh thyme leaves
  • Flaky sea salt, for garnish


Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Place sweet potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain and let cool slightly.
  3. Transfer sweet potatoes to the prepared baking sheet. Using the bottom of a glass or a fork, gently smash each potato to about 1/2-inch thickness.
  4. Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and smoked paprika. Roast in the preheated oven for 20-25 minutes, until crispy and golden brown.
  5. While potatoes roast, make the feta cream: In a small bowl, mash feta with a fork. Add Greek yogurt, lemon juice, olive oil, garlic, salt, and pepper. Mix until smooth and creamy. Set aside.
  6. In another small bowl, combine honey and thyme leaves.
  7. Once potatoes are done, remove from oven and let cool for 5 minutes. Transfer to a serving platter.
  8. Dollop feta cream over the potatoes, then drizzle with honey-thyme mixture. Sprinkle with flaky sea salt and extra thyme if desired. Serve warm.

Notes

You can customize the seasonings to taste. For extra heat, add a pinch of cayenne pepper to the sweet potatoes before roasting. If you prefer a thinner feta cream, add a splash of milk or water.
