These crispy smashed sweet potatoes are the perfect balance of sweet and savory. Roasted until golden and crispy on the outside, then topped with a tangy feta cream and a drizzle of honey. A stunning side dish or appetizer that’s sure to impress.
Ingredients
- 2 lbs small sweet potatoes, scrubbed
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- For the Feta Cream:
- 4 oz feta cheese, crumbled
- 1/4 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
- For the Honey Drizzle:
- 2 tablespoons honey
- 1 teaspoon fresh thyme leaves
- Flaky sea salt, for garnish
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Place sweet potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain and let cool slightly.
- Transfer sweet potatoes to the prepared baking sheet. Using the bottom of a glass or a fork, gently smash each potato to about 1/2-inch thickness.
- Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and smoked paprika. Roast in the preheated oven for 20-25 minutes, until crispy and golden brown.
- While potatoes roast, make the feta cream: In a small bowl, mash feta with a fork. Add Greek yogurt, lemon juice, olive oil, garlic, salt, and pepper. Mix until smooth and creamy. Set aside.
- In another small bowl, combine honey and thyme leaves.
- Once potatoes are done, remove from oven and let cool for 5 minutes. Transfer to a serving platter.
- Dollop feta cream over the potatoes, then drizzle with honey-thyme mixture. Sprinkle with flaky sea salt and extra thyme if desired. Serve warm.
Notes
You can customize the seasonings to taste. For extra heat, add a pinch of cayenne pepper to the sweet potatoes before roasting. If you prefer a thinner feta cream, add a splash of milk or water.
