Ingredients
- 2 large sweet potatoes, cut into 1-inch thick rounds
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 4 ounces feta cheese, crumbled
- 1/4 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill, chopped (optional)
- 2 tablespoons honey
- Fresh parsley, chopped, for garnish
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Place sweet potato rounds on the baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat.
- Roast for 20-25 minutes, until tender and easily pierced with a fork.
- Remove from oven and gently smash each round with the bottom of a glass or a fork.
- Return to oven and roast for another 10-15 minutes, until edges are crispy and golden.
- While potatoes roast, make the feta cream: In a small bowl, mash feta with a fork. Mix in Greek yogurt, lemon juice, and dill until smooth. Season with pepper.
- In a small saucepan, warm honey over low heat until runny.
- Arrange smashed potatoes on a serving platter. Dollop with feta cream and drizzle with honey. Garnish with parsley.
Notes
You can customize the seasonings to taste. For extra crunch, broil the smashed potatoes for 1-2 minutes after the second roast. Adjust honey amount to desired sweetness.
