Description

Juicy chicken breasts are pounded thin, filled with a creamy spinach and whipped feta mixture, rolled, and baked until golden and crispy. Finished with a spicy-sweet hot honey drizzle, these chicken rolls are a flavor-packed dinner that’s both elegant and easy to make.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh spinach, chopped
  • 4 oz cream cheese, softened
  • 1/2 cup crumbled feta cheese
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup hot honey
  • 1 tablespoon apple cider vinegar or lemon juice
  • 1/4 teaspoon red pepper flakes (optional)


Instructions

  1. Preheat oven to 400°F (200°C). Grease a baking dish or line with parchment paper.
  2. Pound each chicken breast to about 1/4-inch thickness between two sheets of plastic wrap. Season both sides with salt and pepper.
  3. In a small bowl, combine spinach, cream cheese, feta, garlic, salt, and pepper until well mixed.
  4. Spread about 2 tablespoons of the spinach-feta mixture onto each chicken breast, leaving a small border. Roll up tightly from one short end, tucking in sides. Secure with toothpicks if needed.
  5. In a shallow bowl, mix panko, Parmesan, and melted butter. Roll each stuffed chicken roll in the breadcrumb mixture to coat.
  6. Place the rolls seam-side down in the prepared baking dish. Bake for 25-30 minutes until golden and chicken reaches 165°F (74°C) internally.
  7. While chicken bakes, make the drizzle: whisk hot honey, apple cider vinegar, and red pepper flakes (if using) in a small bowl.
  8. Remove toothpicks from chicken. Drizzle hot honey mixture over the crispy rolls before serving.

Notes

You can customize the seasonings to taste. For extra heat, add cayenne to the breadcrumb mixture. Serve with a side salad or roasted vegetables.
