A savory-sweet appetizer or side dish featuring crispy roasted sweet potatoes topped with creamy whipped feta and a spicy honey drizzle.
Ingredients
- 2 medium sweet potatoes, scrubbed
- 2 tablespoons olive oil
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 4 ounces feta cheese, crumbled
- 1/4 cup Greek yogurt
- 1 tablespoon lemon juice
- 1/4 cup honey
- 1/2 teaspoon red pepper flakes
- Fresh thyme leaves for garnish
Instructions
- Preheat oven to 425°F (220°C). Place sweet potatoes on a baking sheet, pierce with a fork, and roast for 25-30 minutes until tender. Let cool slightly.
- In a bowl, combine feta, Greek yogurt, and lemon juice. Whip with a fork or blender until smooth and creamy. Set aside.
- Flatten each sweet potato gently with a fork or the bottom of a cup to 'smash' them. Drizzle with olive oil, sprinkle with smoked paprika, salt, and pepper. Roast for another 15-20 minutes until crispy.
- While potatoes roast, warm honey and red pepper flakes in a small saucepan over low heat for 2-3 minutes to infuse. Let cool slightly.
- Arrange crispy sweet potatoes on a plate, top with whipped feta, drizzle with hot honey, and garnish with fresh thyme.
