Description

Golden, crispy smashed potatoes served over a creamy whipped feta dip and finished with a spicy-sweet hot honey drizzle for a perfect appetizer or side dish.


Ingredients

  • 1.5 lbs small Yukon Gold potatoes
  • 3 tbsp olive oil, divided
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 4 oz feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 1 tbsp lemon juice
  • 2 tbsp honey
  • 1/2 tsp red pepper flakes
  • Fresh parsley, chopped for garnish


Instructions

  1. Preheat oven to 425°F (220°C). Boil potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool slightly.
  2. Place potatoes on a baking sheet. Gently smash each with the bottom of a glass or measuring cup. Drizzle with 2 tbsp olive oil and season with salt, pepper, and garlic powder.
  3. Bake for 25-30 minutes until crispy and golden brown.
  4. While potatoes bake, blend feta, Greek yogurt, remaining 1 tbsp olive oil, and lemon juice in a food processor until smooth. Spread on a serving plate.
  5. In a small saucepan, warm honey and red pepper flakes over low heat for 2-3 minutes until fragrant. Remove from heat.
  6. Arrange crispy potatoes over whipped feta, drizzle with hot honey, and garnish with fresh parsley. Serve immediately.
