Description

Golden, crispy smashed potatoes served over a creamy whipped feta dip and finished with a spicy-sweet hot honey drizzle for a perfect appetizer or side dish.


Ingredients

  • 1.5 lbs small Yukon Gold potatoes
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 8 oz feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 2 tbsp lemon juice
  • 1 clove garlic, minced
  • 1/4 cup honey
  • 1 tsp red pepper flakes
  • Fresh parsley, chopped for garnish


Instructions

  1. Preheat oven to 425°F (220°C). Boil potatoes in salted water for 15-20 minutes until fork-tender. Drain and let cool slightly.
  2. Place potatoes on a baking sheet. Use a flat-bottomed cup or masher to gently smash each potato until flattened but still intact.
  3. Drizzle potatoes with olive oil, then season with garlic powder, smoked paprika, salt, and pepper. Bake for 25-30 minutes until crispy and golden brown.
  4. While potatoes bake, make whipped feta: In a food processor, blend feta, Greek yogurt, lemon juice, and minced garlic until smooth and creamy. Spread on a serving plate.
  5. Make hot honey: In a small saucepan, warm honey over low heat. Stir in red pepper flakes and let infuse for 5 minutes, then remove from heat.
  6. To serve, spread whipped feta on a platter, top with crispy smashed potatoes, drizzle with hot honey, and garnish with fresh parsley.
