Description

A delightful side dish featuring golden, crispy smashed potatoes topped with creamy whipped feta and a spicy-sweet hot honey drizzle.


Ingredients

  • 1.5 pounds baby Yukon Gold potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 ounces feta cheese
  • 1/4 cup sour cream
  • 1 tablespoon lemon juice
  • 2 tablespoons honey
  • 1 teaspoon red pepper flakes
  • 1 tablespoon apple cider vinegar
  • Fresh parsley for garnish


Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Place the potatoes in a large pot and cover with salted water. Bring to a boil and cook until tender, about 15 minutes. Drain and let cool slightly.
  3. Place the potatoes on the prepared baking sheet. Using a fork or the bottom of a cup, gently smash each potato until it is flattened but still intact.
  4. Drizzle the smashed potatoes with olive oil and sprinkle with garlic powder, salt, and black pepper. Roast for 25-30 minutes until golden and crispy.
  5. While the potatoes roast, prepare the whipped feta: In a food processor, combine feta cheese, sour cream, and lemon juice. Blend until smooth and creamy.
  6. For the hot honey drizzle: In a small saucepan, combine honey, red pepper flakes, and apple cider vinegar. Heat over low heat for 2-3 minutes, stirring occasionally. Remove from heat.
  7. Spread the whipped feta onto a serving platter. Arrange the crispy smashed potatoes on top. Drizzle with hot honey and garnish with fresh parsley. Serve immediately.

Notes

You can customize the seasonings to taste. For a milder hot honey, reduce the amount of red pepper flakes.
