Description
Golden, crispy smashed potatoes topped with creamy whipped feta and a spicy-sweet hot honey drizzle. Perfect as an appetizer or side dish.
Ingredients
- 1.5 pounds baby potatoes
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 ounces feta cheese, crumbled
- 1/2 cup Greek yogurt
- 1 tablespoon lemon juice
- 2 tablespoons honey
- 1 teaspoon red pepper flakes (or to taste)
- 1 tablespoon butter
- Fresh dill or chives for garnish
Instructions
- Preheat oven to 425°F (220°C). Place baby potatoes in a pot, cover with salted water, bring to a boil, and cook for 15-20 minutes until fork-tender. Drain and let cool slightly.
- On a baking sheet, arrange potatoes and gently smash each with a fork or potato masher until flattened but still intact. Drizzle with olive oil and sprinkle with garlic powder, salt, and pepper.
- Roast for 25-30 minutes until golden and crispy, flipping halfway through.
- While potatoes roast, make whipped feta: in a food processor, blend feta, Greek yogurt, lemon juice, and a pinch of black pepper until smooth and creamy. Set aside.
- For hot honey: in a small saucepan, combine honey, butter, and red pepper flakes. Heat on low until butter melts and mixture is warm. Stir and set aside.
- To serve, spread whipped feta on a plate or platter, top with crispy potatoes, drizzle with hot honey, and garnish with fresh herbs.
Notes
You can customize the seasonings to taste. For extra heat, add more red pepper flakes or a pinch of cayenne to the hot honey.
