Description

Golden, crispy smashed potatoes paired with a creamy, tangy whipped feta and finished with a sweet and spicy hot honey drizzle. An irresistible side dish or appetizer.


Ingredients

  • 1.5 lbs small Yukon Gold potatoes
  • 3 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 6 oz feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 2 tbsp lemon juice
  • 2 tbsp honey
  • 1 tsp red pepper flakes
  • 1 tbsp butter
  • Fresh dill or parsley for garnish


Instructions

  1. Preheat oven to 425°F (220°C). Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 15-20 minutes. Drain and let cool slightly.
  2. Place potatoes on a baking sheet lined with parchment paper. Using a flat-bottomed glass or potato masher, gently smash each potato to about 1/2-inch thickness. Drizzle with olive oil and season with salt and pepper.
  3. Roast for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  4. While potatoes roast, prepare whipped feta: In a food processor, combine feta, Greek yogurt, and lemon juice. Blend until smooth and creamy, scraping down sides as needed.
  5. Make hot honey: In a small saucepan, combine honey, red pepper flakes, and butter. Warm over low heat for 2-3 minutes until butter is melted and mixture is fragrant. Remove from heat.
  6. To serve, spread whipped feta on a serving plate, top with crispy smashed potatoes, drizzle with hot honey, and garnish with fresh herbs.

Notes

You can customize the seasonings to taste. For extra crispiness, let the smashed potatoes sit uncovered for 10 minutes before roasting. Adjust the hot honey spice level by adding more or less red pepper flakes.
