Description
Crispy, golden smashed potatoes are paired with a creamy, tangy whipped feta and finished with a spicy-sweet hot honey drizzle. This dish is perfect as an appetizer or a side, offering a delightful contrast of textures and flavors.
Ingredients
- 1.5 lbs baby potatoes (Yukon Gold or red)
- 3 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 6 oz feta cheese, crumbled
- 1/4 cup plain Greek yogurt
- 2 tbsp lemon juice
- 2 tbsp milk (or more as needed)
- 1/4 cup honey
- 1 tsp red pepper flakes (or to taste)
- 1 tsp apple cider vinegar
- Optional: fresh parsley or chives for garnish
Instructions
- Preheat oven to 425°F (220°C). Place the baby potatoes in a large pot and cover with cold salted water. Bring to a boil, then reduce to a simmer and cook until tender, about 15-20 minutes. Drain well.
- Transfer the cooked potatoes to a baking sheet lined with parchment paper. Using a flat-bottomed glass or the back of a fork, gently smash each potato until it is about 1/2-inch thick. Drizzle with olive oil and season with salt and pepper.
- Roast for 20 minutes, then flip the potatoes carefully and roast for another 15-20 minutes until golden and crispy on both sides.
- While potatoes roast, prepare the whipped feta. In a food processor, combine feta, Greek yogurt, lemon juice, and milk. Process until smooth and creamy, scraping down sides as needed. Adjust consistency with more milk if desired. Set aside.
- Make the hot honey drizzle. In a small saucepan, combine honey and red pepper flakes. Warm over low heat for 2-3 minutes, then remove from heat and stir in apple cider vinegar. Set aside.
- To serve, spread the whipped feta on a platter or individual plates. Arrange the crispy smashed potatoes on top. Drizzle generously with hot honey. Garnish with fresh herbs if desired.
Notes
You can customize the seasonings to taste. For extra heat, add more red pepper flakes to the honey or sprinkle some flaky sea salt over the finished dish.
