Description
Perfectly crispy smashed potatoes topped with creamy whipped feta and a spicy-sweet hot honey drizzle. A show-stopping side dish or appetizer that’s bursting with texture and flavor.
Ingredients
- 1 1/2 pounds baby potatoes (about 15-20)
- 3 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 4 ounces feta cheese, crumbled
- 2 ounces cream cheese, softened
- 2 tablespoons plain Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill, chopped
- 1/4 cup honey
- 1 tablespoon apple cider vinegar
- 1 teaspoon red pepper flakes (or more to taste)
Instructions
- Place potatoes in a large pot and cover with salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool slightly.
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Place each potato on the baking sheet and use a fork or potato masher to gently smash to about 1/2-inch thickness.
- Drizzle smashed potatoes with olive oil and sprinkle with salt, pepper, and garlic powder. Roast for 20-25 minutes until golden and crispy.
- Meanwhile, make whipped feta: In a food processor, combine feta, cream cheese, yogurt, lemon juice, and dill. Blend until smooth and creamy, scraping down sides as needed. Set aside.
- Make hot honey: In a small saucepan, combine honey, apple cider vinegar, and red pepper flakes. Warm over low heat, stirring occasionally, for 2-3 minutes. Remove from heat.
- To serve, spread whipped feta on a serving plate, top with crispy smashed potatoes, and drizzle generously with hot honey. Garnish with extra dill if desired.
Notes
You can customize the seasonings to taste. For extra heat, add more red pepper flakes to the honey. The whipped feta can be made a day ahead and stored in the refrigerator.
