Description
Golden, crunchy smashed potatoes topped with a creamy, tangy whipped feta and finished with a spicy-sweet hot honey drizzle. An irresistible side dish or appetizer that’s perfect for entertaining.
Ingredients
- 1.5 lbs baby Yukon Gold or red potatoes
- 3 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 6 oz feta cheese, crumbled
- 1/4 cup plain Greek yogurt
- 2 tablespoons milk or buttermilk
- 1 tablespoon lemon juice
- 1/3 cup honey
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon red pepper flakes (or to taste)
- Fresh parsley or chives for garnish
Instructions
- Preheat oven to 425°F (220°C). Place potatoes in a large pot, cover with salted water, and bring to a boil. Cook until fork-tender, about 15-20 minutes. Drain well.
- Arrange the cooked potatoes on a rimmed baking sheet. Using a fork or potato masher, gently press down on each potato to flatten to about 1/2 inch thickness.
- Drizzle potatoes with olive oil, sprinkle with salt and pepper. Roast for 20 minutes, then flip carefully and roast another 15-20 minutes until golden and crispy.
- Meanwhile, make the whipped feta: in a food processor, combine feta, Greek yogurt, milk, and lemon juice. Blend until smooth and creamy, scraping sides as needed. Set aside.
- For the hot honey: in a small saucepan, combine honey, apple cider vinegar, and red pepper flakes. Warm over low heat for 2-3 minutes, stirring occasionally. Remove from heat and let steep.
- Spread whipped feta on a serving platter, top with crispy potatoes, drizzle generously with hot honey, and garnish with fresh herbs. Serve immediately.
