Description

These savory muffins combine grated zucchini and potato with Parmesan cheese and a crispy breadcrumb topping. Perfect as a side dish or snack, they are golden, cheesy, and delicious.

Ingredients

  • 2 cups grated zucchini (about 2 medium)
  • 2 cups grated potatoes (about 2 medium)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 large eggs
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin.
  2. Grate zucchini and potatoes. Place in a clean kitchen towel and squeeze out excess moisture.
  3. In a large bowl, combine zucchini, potatoes, Parmesan, breadcrumbs, eggs, parsley, garlic powder, salt, and pepper. Mix well.
  4. Divide mixture evenly among muffin cups, pressing down gently. Drizzle each with olive oil.
  5. Bake for 30 minutes or until golden and crispy on top.
  6. Let cool for 5 minutes before removing from tin. Serve warm.

Notes

You can customize the seasonings to taste. For extra crispiness, broil for 1-2 minutes at the end.
