Ingredients
- 2 cans (14 oz each) artichoke hearts, drained and halved
- 1/2 cup grated Parmesan cheese
- 1/2 cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, beaten
- Cooking spray or olive oil spray
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with cooking spray.
- In a shallow bowl, combine the grated Parmesan, panko breadcrumbs, garlic powder, oregano, salt, and pepper.
- Place the beaten eggs in another shallow bowl. Dip each artichoke heart half into the egg, then coat with the Parmesan breadcrumb mixture, pressing gently to adhere.
- Arrange the coated artichoke hearts on the prepared baking sheet in a single layer. Lightly spray the tops with cooking spray for extra crispiness.
- Bake for 15-20 minutes, flipping halfway through, until golden brown and crispy. Serve immediately with your favorite dipping sauce.
Notes
You can customize the seasonings to taste. For added heat, mix in a pinch of cayenne pepper with the breadcrumb mixture. Serve with marinara or aioli for dipping.
