Description

These chicken tenders are coated in a crispy seasoned breading, baked to golden perfection, then drizzled with a spicy hot honey and tangy lemon mixture. Crumbled feta adds a salty, creamy finish. Perfect for a flavorful weeknight dinner or game day snack.


Ingredients

  • 1.5 pounds chicken tenders
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Cooking spray or olive oil for greasing
  • 1/2 cup honey
  • 2 tablespoons hot sauce (such as Frank's RedHot)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 cup crumbled feta cheese
  • Fresh parsley, chopped (optional, for garnish)


Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease with cooking spray or olive oil.
  2. Set up a breading station: In one shallow dish, mix flour, garlic powder, smoked paprika, salt, and pepper. In a second dish, beat eggs. In a third dish, place panko breadcrumbs.
  3. Pat chicken tenders dry with paper towels. Dredge each tender in the flour mixture, shaking off excess. Dip into beaten eggs, then press into panko breadcrumbs until fully coated. Place on prepared baking sheet.
  4. Lightly spray the tops of the chicken tenders with cooking spray or drizzle with a little olive oil. Bake for 15-20 minutes, flipping halfway, until golden brown and cooked through (internal temperature reaches 165°F).
  5. While chicken bakes, make the hot honey: In a small bowl, whisk together honey, hot sauce, lemon juice, and lemon zest.
  6. Once chicken is done, remove from oven and drizzle generously with the hot honey mixture. Sprinkle crumbled feta over the top.
  7. Return to oven for 2-3 minutes, just until feta softens slightly. Garnish with fresh parsley if desired. Serve warm.

Notes

You can customize the seasonings to taste. Adjust the hot sauce amount for more or less heat. For extra crispiness, broil the tenders for 1-2 minutes after drizzling with honey, but watch closely to avoid burning.
