Description

Crispy baked chicken tenders coated in a zesty lemon-feta crust, finished with a sweet and spicy hot honey drizzle.


Ingredients

  • 1 lb chicken tenders
  • 1/2 cup all-purpose flour
  • 1/2 cup panko breadcrumbs
  • 1/2 cup crumbled feta cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs
  • 1 tbsp lemon zest
  • 3 tbsp honey
  • 1 tbsp hot sauce (such as sriracha)
  • 1 tbsp lemon juice
  • 2 tbsp olive oil (for drizzling)


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, combine flour, panko, feta, garlic powder, paprika, salt, and pepper.
  3. In another bowl, whisk eggs with lemon zest until frothy.
  4. Dip each chicken tender into the egg mixture, then coat with the feta-panko mixture, pressing firmly.
  5. Place tenders on the prepared baking sheet and drizzle with olive oil.
  6. Bake for 15-18 minutes, flipping halfway, until golden and crispy (internal temp 165°F).
  7. While tenders bake, whisk honey, hot sauce, and lemon juice in a small bowl.
  8. Drizzle the hot honey mixture over the baked chicken tenders and serve immediately.

Notes

You can customize the seasonings to taste. For extra heat, add more hot sauce or a pinch of cayenne to the breading.
