Description

Crispy, golden chicken tenders coated in a tangy hot honey lemon glaze and topped with crumbled feta cheese. A sweet, spicy, and savory twist on a classic favorite.


Ingredients

  • 1 lb chicken tenders
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg
  • Vegetable oil for frying
  • 1/4 cup honey
  • 2 tablespoons hot sauce (e.g., Frank's RedHot)
  • 1 tablespoon lemon juice
  • Zest of 1 lemon
  • 1/2 cup crumbled feta cheese
  • Fresh lemon wedges and parsley for garnish


Instructions

  1. In a bowl, combine chicken tenders and buttermilk. Let marinate for at least 30 minutes (or up to 2 hours).
  2. In a shallow dish, whisk together flour, cornstarch, garlic powder, paprika, salt, and pepper. In another bowl, beat the egg.
  3. Remove chicken from buttermilk, letting excess drip off. Dip each tender into the egg, then coat in the flour mixture, pressing to adhere. Shake off excess.
  4. Heat about 1 inch of vegetable oil in a large skillet to 350°F (175°C). Fry chicken in batches for 4-5 minutes per side until golden brown and cooked through. Drain on paper towels.
  5. In a small saucepan over low heat, combine honey, hot sauce, lemon juice, and lemon zest. Stir until heated through and well combined.
  6. Toss the fried chicken tenders in the hot honey lemon sauce until evenly coated.
  7. Arrange on a serving platter, sprinkle with crumbled feta cheese, and garnish with lemon wedges and fresh parsley. Serve immediately.

Notes

You can customize the seasonings to taste. For extra heat, add a pinch of cayenne pepper to the flour mixture.
