Ingredients
- 1 lb chicken tenders
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large egg
- Vegetable oil for frying
- 1/4 cup honey
- 2 tablespoons hot sauce (e.g., Frank's RedHot)
- 1 tablespoon lemon juice
- Zest of 1 lemon
- 1/2 cup crumbled feta cheese
- Fresh lemon wedges and parsley for garnish
Instructions
- In a bowl, combine chicken tenders and buttermilk. Let marinate for at least 30 minutes (or up to 2 hours).
- In a shallow dish, whisk together flour, cornstarch, garlic powder, paprika, salt, and pepper. In another bowl, beat the egg.
- Remove chicken from buttermilk, letting excess drip off. Dip each tender into the egg, then coat in the flour mixture, pressing to adhere. Shake off excess.
- Heat about 1 inch of vegetable oil in a large skillet to 350°F (175°C). Fry chicken in batches for 4-5 minutes per side until golden brown and cooked through. Drain on paper towels.
- In a small saucepan over low heat, combine honey, hot sauce, lemon juice, and lemon zest. Stir until heated through and well combined.
- Toss the fried chicken tenders in the hot honey lemon sauce until evenly coated.
- Arrange on a serving platter, sprinkle with crumbled feta cheese, and garnish with lemon wedges and fresh parsley. Serve immediately.
Notes
You can customize the seasonings to taste. For extra heat, add a pinch of cayenne pepper to the flour mixture.
