Description

A vibrant and creamy appetizer featuring whipped feta, sweet-tangy marinated beets, and a crunchy pistachio topping. Perfect for entertaining or a light starter.


Ingredients

  • 8 oz feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/4 teaspoon black pepper
  • 2 medium cooked beets, diced
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1/4 cup shelled pistachios, roughly chopped
  • 1 tablespoon fresh dill, chopped
  • Salt to taste


Instructions

  1. In a food processor, combine crumbled feta, Greek yogurt, olive oil, lemon juice, and black pepper. Blend until smooth and creamy. Season with salt if needed.
  2. In a small bowl, toss diced beets with balsamic vinegar, honey, and a pinch of salt. Let marinate for 10 minutes.
  3. In a dry skillet over medium heat, toast chopped pistachios for 2-3 minutes until fragrant. Remove from heat and let cool.
  4. Spread the whipped feta onto a serving plate or bowl. Top with marinated beets, sprinkle with toasted pistachios and fresh dill. Serve with crackers or crusty bread.
