Description
A vibrant and flavorful appetizer featuring creamy whipped feta topped with tangy marinated beets and a crunchy pistachio topping. Perfect for entertaining.
Ingredients
- 8 oz feta cheese, crumbled
- 4 oz cream cheese, softened
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1/4 tsp black pepper
- 2 medium cooked beets, diced
- 2 tbsp red wine vinegar
- 1 tsp honey
- 1/4 cup shelled pistachios, chopped
- 1 tbsp fresh parsley, chopped
- Salt to taste
Instructions
- In a food processor, combine feta cheese, cream cheese, 2 tbsp olive oil, lemon juice, and black pepper. Blend until smooth and creamy. Set aside.
- In a small bowl, whisk together remaining 1 tbsp olive oil, red wine vinegar, and honey. Add diced beets and toss to coat. Let marinate for at least 15 minutes.
- In a dry skillet, toast chopped pistachios over medium heat for 2-3 minutes until fragrant. Remove from heat and set aside.
- Spread the whipped feta onto a serving plate or bowl.
- Top with marinated beets and sprinkle with toasted pistachios and fresh parsley.
- Serve immediately with crackers or bread.
