Description

A vibrant and flavorful appetizer featuring creamy whipped feta topped with tangy marinated beets and a crunchy pistachio topping. Perfect for entertaining.


Ingredients

  • 8 oz feta cheese, crumbled
  • 4 oz cream cheese, softened
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1/4 tsp black pepper
  • 2 medium cooked beets, diced
  • 2 tbsp red wine vinegar
  • 1 tsp honey
  • 1/4 cup shelled pistachios, chopped
  • 1 tbsp fresh parsley, chopped
  • Salt to taste


Instructions

  1. In a food processor, combine feta cheese, cream cheese, 2 tbsp olive oil, lemon juice, and black pepper. Blend until smooth and creamy. Set aside.
  2. In a small bowl, whisk together remaining 1 tbsp olive oil, red wine vinegar, and honey. Add diced beets and toss to coat. Let marinate for at least 15 minutes.
  3. In a dry skillet, toast chopped pistachios over medium heat for 2-3 minutes until fragrant. Remove from heat and set aside.
  4. Spread the whipped feta onto a serving plate or bowl.
  5. Top with marinated beets and sprinkle with toasted pistachios and fresh parsley.
  6. Serve immediately with crackers or bread.
