A vibrant and flavorful appetizer featuring silky whipped feta topped with tangy marinated beets and a crunchy pistachio topping. Perfect for entertaining or a light snack.
Ingredients
- 8 oz feta cheese, crumbled
- 1/2 cup Greek yogurt
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1/4 teaspoon black pepper
- 2 medium cooked beets, diced
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1/4 cup shelled pistachios, roughly chopped
- 1 tablespoon fresh mint, chopped
- Salt to taste
Instructions
- In a food processor, combine feta cheese, Greek yogurt, olive oil, lemon juice, and black pepper. Blend until smooth and creamy, scraping down sides as needed. Set aside.
- In a small bowl, mix diced beets with balsamic vinegar and honey. Let marinate for at least 10 minutes.
- In a dry skillet over medium heat, toast chopped pistachios for 2-3 minutes until fragrant. Remove from heat.
- Spread whipped feta onto a serving plate or shallow bowl. Top with marinated beets and their juices.
- Sprinkle toasted pistachios and fresh mint over the top. Serve immediately with pita chips or crackers.
Notes
You can customize the seasonings to taste. For extra creaminess, add a splash of milk if needed.
