Description

A vibrant and flavorful appetizer featuring silky whipped feta topped with tangy marinated beets and a crunchy pistachio topping. Perfect for entertaining or a light snack.


Ingredients

  • 8 oz feta cheese, crumbled
  • 1/2 cup Greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/4 teaspoon black pepper
  • 2 medium cooked beets, diced
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1/4 cup shelled pistachios, roughly chopped
  • 1 tablespoon fresh mint, chopped
  • Salt to taste


Instructions

  1. In a food processor, combine feta cheese, Greek yogurt, olive oil, lemon juice, and black pepper. Blend until smooth and creamy, scraping down sides as needed. Set aside.
  2. In a small bowl, mix diced beets with balsamic vinegar and honey. Let marinate for at least 10 minutes.
  3. In a dry skillet over medium heat, toast chopped pistachios for 2-3 minutes until fragrant. Remove from heat.
  4. Spread whipped feta onto a serving plate or shallow bowl. Top with marinated beets and their juices.
  5. Sprinkle toasted pistachios and fresh mint over the top. Serve immediately with pita chips or crackers.

Notes

You can customize the seasonings to taste. For extra creaminess, add a splash of milk if needed.
