Description

A vibrant and creamy appetizer featuring whipped feta topped with tangy marinated beets and a crunchy pistachio topping.


Ingredients

  • 8 ounces feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/4 teaspoon black pepper
  • 2 medium beets, cooked and diced
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey
  • 1/4 cup shelled pistachios, roughly chopped
  • 1 tablespoon fresh dill, chopped
  • Salt to taste


Instructions

  1. In a food processor, combine feta cheese, Greek yogurt, olive oil, lemon juice, and black pepper. Process until smooth and creamy. Set aside.
  2. In a small bowl, mix diced beets with red wine vinegar, honey, and a pinch of salt. Let marinate for at least 15 minutes.
  3. In a dry skillet over medium heat, toast pistachios for 2-3 minutes until fragrant. Remove from heat and let cool.
  4. Spread the whipped feta onto a serving plate or bowl. Top with marinated beets and their juices.
  5. Sprinkle with toasted pistachios and fresh dill. Serve with pita chips or crostini.
