Description
A refreshing and indulgent salad featuring succulent shrimp, creamy avocado, and a tangy lime-cilantro dressing. Perfect for a light lunch or a flavorful dinner.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 ripe avocados, cubed
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 cup Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon lime zest
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon chili powder (optional)
Instructions
- Bring a pot of salted water to a boil. Add shrimp and cook for 2-3 minutes until pink and opaque. Drain and immediately transfer to an ice bath to stop cooking. Pat dry and chop into bite-sized pieces.
- In a large bowl, whisk together Greek yogurt, mayonnaise, lime juice, lime zest, garlic, salt, pepper, and chili powder (if using) until smooth.
- Add the chopped shrimp, avocado cubes, red onion, and cilantro to the bowl. Gently toss until everything is well coated with the dressing.
- Taste and adjust seasoning if needed. Serve immediately, or chill in the refrigerator for 30 minutes for a colder salad.
Notes
You can customize the seasonings to taste. For extra heat, add a diced jalapeño. This salad is best served fresh, but can be stored in an airtight container in the refrigerator for up to 1 day.
