Description

A refreshing and indulgent salad featuring succulent shrimp, creamy avocado, and a tangy lime-cilantro dressing. Perfect for a light lunch or a flavorful dinner.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 ripe avocados, cubed
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon chili powder (optional)


Instructions

  1. Bring a pot of salted water to a boil. Add shrimp and cook for 2-3 minutes until pink and opaque. Drain and immediately transfer to an ice bath to stop cooking. Pat dry and chop into bite-sized pieces.
  2. In a large bowl, whisk together Greek yogurt, mayonnaise, lime juice, lime zest, garlic, salt, pepper, and chili powder (if using) until smooth.
  3. Add the chopped shrimp, avocado cubes, red onion, and cilantro to the bowl. Gently toss until everything is well coated with the dressing.
  4. Taste and adjust seasoning if needed. Serve immediately, or chill in the refrigerator for 30 minutes for a colder salad.

Notes

You can customize the seasonings to taste. For extra heat, add a diced jalapeño. This salad is best served fresh, but can be stored in an airtight container in the refrigerator for up to 1 day.
