Ingredients
- 2 large sweet potatoes
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces cremini mushrooms, sliced
- 3 cloves garlic, minced
- 4 cups fresh spinach
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon nutmeg
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C). Scrub sweet potatoes, pierce with a fork, rub with olive oil, salt, and pepper, and bake for 45-50 minutes until tender.
- While potatoes bake, heat olive oil in a skillet over medium heat. Add mushrooms and cook until browned, about 5-7 minutes.
- Add garlic and spinach to the skillet, cooking until spinach wilts, about 2-3 minutes.
- Stir in heavy cream, Parmesan, and nutmeg. Simmer for 3-4 minutes until sauce thickens slightly.
- Slice baked sweet potatoes in half lengthwise, fluff flesh with a fork, and top with the creamy mushroom spinach mixture.
- Garnish with fresh parsley and serve warm.
