Description
Tender zucchini slices are rolled around a rich and creamy burrata filling, then baked in a sweet and tangy tomato glaze. This elegant dish is perfect for a light summer dinner or a show-stopping appetizer.
Ingredients
- 2 large zucchini, sliced lengthwise into 1/4-inch thick strips
- 1 tablespoon olive oil, plus more for brushing
- 8 oz burrata cheese, drained and divided into 8 pieces
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh basil leaves, chopped
- 1/4 teaspoon red pepper flakes (optional)
- 1 cup tomato sauce (or passata)
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey or sugar
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Brush a baking dish with olive oil.
- Brush zucchini strips with olive oil and season with salt and pepper. Grill or pan-sear for 1-2 minutes per side until pliable and lightly charred. Set aside to cool slightly.
- In a small bowl, mix together the Parmesan, basil, and red pepper flakes (if using).
- Place a piece of burrata on each zucchini strip. Sprinkle the Parmesan-basil mixture over the burrata.
- Roll each zucchini strip tightly around the filling, securing with a toothpick if needed. Place the rolls seam-side down in the prepared baking dish.
- In a small bowl, whisk together tomato sauce, balsamic vinegar, and honey. Pour over the zucchini rolls.
- Bake for 20-25 minutes, until the glaze is bubbly and the zucchini is tender.
- Let rest for 5 minutes before serving. Garnish with extra fresh basil if desired.
