Description
Thinly sliced zucchini rolled around creamy burrata and herbs, baked until tender, and served with a rich tomato glaze for an elegant, flavorful dish.
Ingredients
- 2 medium zucchinis, thinly sliced lengthwise
- 8 oz burrata cheese, drained
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 cup tomato sauce
- 1 tsp balsamic vinegar
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese for topping
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Lay zucchini slices on a baking sheet, brush with olive oil, and season with salt and pepper. Bake for 5 minutes to soften.
- In a bowl, mix burrata, basil, and garlic until creamy. Spoon a small amount onto each zucchini slice and roll up tightly.
- Place rolls seam-side down in the baking dish. Pour tomato sauce mixed with balsamic vinegar around the rolls.
- Sprinkle with Parmesan cheese and bake for 20-25 minutes until zucchini is tender and sauce is bubbly.
- Serve warm, drizzled with extra tomato glaze from the dish.
