Ingredients

  • 2 medium zucchinis, thinly sliced lengthwise
  • 8 oz burrata cheese, drained
  • 1/4 cup fresh basil leaves, chopped
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese for topping

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Lay zucchini slices on a baking sheet, brush with olive oil, and bake for 5-7 minutes until pliable. Let cool.
  3. In a bowl, mix burrata cheese, chopped basil, salt, and pepper until creamy.
  4. Spread a spoonful of burrata mixture onto each zucchini slice, roll up tightly, and place seam-side down in the baking dish.
  5. For the glaze, blend cherry tomatoes, balsamic vinegar, honey, and a pinch of salt until smooth. Simmer in a saucepan for 5-10 minutes until thickened.
