Ingredients
- 4 boneless skinless chicken breasts
- 1 medium apple, peeled, cored, and finely diced
- 1/2 cup shredded sharp cheddar cheese
- 2 ounces cream cheese, softened
- 1/4 cup plain breadcrumbs
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon butter, melted
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a medium bowl, combine diced apple, cheddar cheese, cream cheese, breadcrumbs, parsley, cinnamon, salt, and pepper. Mix until evenly incorporated.
- Pat chicken breasts dry with paper towels. Using a sharp knife, cut a pocket horizontally into the thickest side of each breast, being careful not to cut all the way through.
- Evenly divide the apple-cheese mixture among the pockets, using the filling to stuff each breast. Secure the openings with toothpicks if needed.
- Brush the top of each stuffed chicken breast with melted butter, then drizzle with olive oil.
- Place the chicken in a greased baking dish. Bake for 25–30 minutes, or until the chicken is cooked through (internal temperature reaches 165°F) and the top is lightly golden.
- Let rest for 5 minutes before serving. Remove toothpicks if used, and garnish with additional parsley if desired.
Notes
You can customize the seasonings to taste. For a sweeter touch, add a pinch of nutmeg. For extra crunch, toast the breadcrumbs before mixing.
