Description

Juicy chicken breasts stuffed with a creamy blend of apples, cheddar cheese, and a hint of cinnamon, then baked to golden perfection. A sweet and savory delight that’s perfect for a cozy dinner.


Ingredients

  • 4 boneless skinless chicken breasts
  • 1 medium apple, peeled, cored, and finely diced
  • 1/2 cup shredded sharp cheddar cheese
  • 2 ounces cream cheese, softened
  • 1/4 cup plain breadcrumbs
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter, melted
  • 1 tablespoon olive oil


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a medium bowl, combine diced apple, cheddar cheese, cream cheese, breadcrumbs, parsley, cinnamon, salt, and pepper. Mix until evenly incorporated.
  3. Pat chicken breasts dry with paper towels. Using a sharp knife, cut a pocket horizontally into the thickest side of each breast, being careful not to cut all the way through.
  4. Evenly divide the apple-cheese mixture among the pockets, using the filling to stuff each breast. Secure the openings with toothpicks if needed.
  5. Brush the top of each stuffed chicken breast with melted butter, then drizzle with olive oil.
  6. Place the chicken in a greased baking dish. Bake for 25–30 minutes, or until the chicken is cooked through (internal temperature reaches 165°F) and the top is lightly golden.
  7. Let rest for 5 minutes before serving. Remove toothpicks if used, and garnish with additional parsley if desired.

Notes

You can customize the seasonings to taste. For a sweeter touch, add a pinch of nutmeg. For extra crunch, toast the breadcrumbs before mixing.
